Green Goddess Chicken Cobb Salad
Spiced Pear with Walnuts
Ingredients
- 5 cups chopped romaine lettuce
- ⅓ cup diced celery
- 1 vine-ripened tomato, sliced
- 3 Tbsp crumbled blue cheese
- 1 avocado, pitted and cubed
- 2 hard-cooked eggs, coarsely chopped
- 1 cup shredded rotisserie chicken breast (without skin; see Note)
- 3 Tbsp refrigerated green goddess dressing
Instructions
- Arrange lettuce, celery, tomato, cheese, avocado, and eggs on a serving plate. Top with chicken; drizzle with dressing.
Side Dish Ingredients
- 3 Tbsp chopped walnuts
- 1 pear, thinly sliced
- ¼ tsp dried rosemary (or use ¼ tsp chopped fresh)
- Dash of cayenne pepper (optional)
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat 2 to 3 minutes or until fragrant. Toss together nuts and remaining ingredients in a bowl.
