Green Goddess Chicken Cobb Salad

Ingredients

  • 5 cups chopped romaine lettuce
  • ⅓ cup diced celery
  • 1 vine-ripened tomato, sliced
  • 3 Tbsp crumbled blue cheese
  • 1 avocado, pitted and cubed
  • 2 hard-cooked eggs, coarsely chopped
  • 1 cup shredded rotisserie chicken breast (without skin; see Note)
  • 3 Tbsp refrigerated green goddess dressing

Instructions

  1. Arrange lettuce, celery, tomato, cheese, avocado, and eggs on a serving plate. Top with chicken; drizzle with dressing.

Side Dish Ingredients

  • 3 Tbsp chopped walnuts
  • 1 pear, thinly sliced
  • ¼ tsp dried rosemary (or use ¼ tsp chopped fresh)
  • Dash of cayenne pepper (optional)

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat 2 to 3 minutes or until fragrant. Toss together nuts and remaining ingredients in a bowl.
