Cheesy Beef and Bean Burritos

Ingredients

  • ½ lb ground beef
  • 1 tsp ground cumin
  • 2 to 3 (8-inch) flour tortillas
  • 1 (15.5-oz) can refried beans
  • 1 (8.8-oz) pouch microwavable Spanish rice
  • ¼ cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 2 cups shredded lettuce
  • 1 Tbsp chopped fresh cilantro 

Instructions

  1. Cook beef in a skillet over medium-high heat stirring until browned and crumbly; drain, and return to skillet.
  2. Stir in cumin; season to taste with salt and pepper.
  3. Heat tortillas according to package directions. Heat beans according to package directions.
  4. Spread desired amount of beans onto tortillas. Spoon ground beef down center of each tortilla. Top with desired amount of rice, sour cream, cheese, lettuce and cilantro; roll up.

Side Dish Ingredients

  • ½ (10-oz) bag tortilla chips
  • ½ (16-oz) container fresh salsa

Side Dish Instructions

  1. Serve chips with salsa.
