Sheet Pan Pork Chops with Mushrooms and Broccolini

Ingredients

  • 6 bone-in pork chops
  • 2 (8-oz) pkg whole baby portobello mushrooms
  • 2 (8-oz) pkg whole mushrooms
  • 6 Tbsp olive oil, divided
  • 4 cloves garlic, thinly sliced
  • 2 Tbsp chopped fresh rosemary
  • 2 bunches Broccolini, trimmed

Instructions

  1. Preheat oven to 450°F. Toss together pork, mushrooms, 5 Tbsp oil, garlic, rosemary, and desired amount of kosher salt and pepper in a large bowl.
  2. Divide between 2 greased rimmed baking sheets. Bake 10 minutes.
  3. Add Broccolini to both pans; drizzle with 1 Tbsp oil. Bake 10 minutes or until done.

Side Dish Ingredients

  • 2 (10-oz) pkg cauliflower florets
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • ¼ cup chicken broth

Side Dish Instructions

  1. Pulse cauliflower in a food processor until rice-like consistency.
  2. Cook cauliflower and garlic in hot oil in a large skillet over medium-high heat 2 minutes. Stir in broth; cover and cook 15 minutes. Season with salt and pepper to taste.
