Sheet Pan Pork Chops with Mushrooms and Broccolini
Skillet Cauli-Rice
Ingredients
- 6 bone-in pork chops
- 2 (8-oz) pkg whole baby portobello mushrooms
- 2 (8-oz) pkg whole mushrooms
- 6 Tbsp olive oil, divided
- 4 cloves garlic, thinly sliced
- 2 Tbsp chopped fresh rosemary
- 2 bunches Broccolini, trimmed
Instructions
- Preheat oven to 450°F. Toss together pork, mushrooms, 5 Tbsp oil, garlic, rosemary, and desired amount of kosher salt and pepper in a large bowl.
- Divide between 2 greased rimmed baking sheets. Bake 10 minutes.
- Add Broccolini to both pans; drizzle with 1 Tbsp oil. Bake 10 minutes or until done.
Side Dish Ingredients
- 2 (10-oz) pkg cauliflower florets
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- ¼ cup chicken broth
Side Dish Instructions
- Pulse cauliflower in a food processor until rice-like consistency.
- Cook cauliflower and garlic in hot oil in a large skillet over medium-high heat 2 minutes. Stir in broth; cover and cook 15 minutes. Season with salt and pepper to taste.
