Grilled Chicken with Strawberry-Avocado Salsa

Ingredients

  • 6 boneless, skinless chicken breasts
  • 6 Tbsp fresh lime juice, divided
  • 4 cloves garlic, minced
  • 3 Tbsp olive oil, divided
  • 1 Tbsp honey
  • 1 tsp grated lime rind
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1½ tsp kosher salt, divided
  • 1¼ tsp pepper, divided
  • 2 avocados, pitted and diced
  • 3 cups sliced strawberries
  • ¼ cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and minced

Instructions

  1. Pound chicken to ½-inch thickness.
  2. Whisk together ¼ cup lime juice, garlic, 2 Tbsp oil, honey, lime rind, cumin, chili powder, and 1 tsp each salt and pepper in a bowl. Add chicken; turn to coat. Let stand 15 minutes.
  3. Preheat grill or grill pan to medium-high heat. Toss together avocados, strawberries, cilantro, jalapeño, 2 Tbsp lime juice, 1 Tbsp oil, ½ tsp salt, and ¼ tsp pepper.
  4. Remove chicken from marinade; discard marinade. Grill, covered with grill lid, 5 to 7 minutes per side or until done. Serve salsa over chicken.

  • 2 lb green beans, trimmed
  • ¼ cup chicken broth
  • 1 clove garlic, minced
  • ½ cup almonds, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice

Side Dish Instructions

  1. Place green beans, broth, and garlic in a large microwave-safe bowl. Cover tightly with plastic wrap; pierce with a fork. Microwave at HIGH 4 to 6 minutes or until crisp-tender. Drain well.
  2. Toss together green beans, almonds, oil, lemon juice, and salt and pepper to taste.
