Grilled Chicken with Strawberry-Avocado Salsa
Easy Green Bean Amandine
Ingredients
- 6 boneless, skinless chicken breasts
- 6 Tbsp fresh lime juice, divided
- 4 cloves garlic, minced
- 3 Tbsp olive oil, divided
- 1 Tbsp honey
- 1 tsp grated lime rind
- 1 tsp ground cumin
- 1 tsp chili powder
- 1½ tsp kosher salt, divided
- 1¼ tsp pepper, divided
- 2 avocados, pitted and diced
- 3 cups sliced strawberries
- ¼ cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and minced
Instructions
- Pound chicken to ½-inch thickness.
- Whisk together ¼ cup lime juice, garlic, 2 Tbsp oil, honey, lime rind, cumin, chili powder, and 1 tsp each salt and pepper in a bowl. Add chicken; turn to coat. Let stand 15 minutes.
- Preheat grill or grill pan to medium-high heat. Toss together avocados, strawberries, cilantro, jalapeño, 2 Tbsp lime juice, 1 Tbsp oil, ½ tsp salt, and ¼ tsp pepper.
- Remove chicken from marinade; discard marinade. Grill, covered with grill lid, 5 to 7 minutes per side or until done. Serve salsa over chicken.

- 2 lb green beans, trimmed
- ¼ cup chicken broth
- 1 clove garlic, minced
- ½ cup almonds, chopped
- 1 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
Side Dish Instructions
- Place green beans, broth, and garlic in a large microwave-safe bowl. Cover tightly with plastic wrap; pierce with a fork. Microwave at HIGH 4 to 6 minutes or until crisp-tender. Drain well.
- Toss together green beans, almonds, oil, lemon juice, and salt and pepper to taste.
