Chicken Caesar Salad
Marinated Tomatoes
Ingredients
- 1 (5.3-oz) carton plain Greek yogurt
- ¼ cup fresh lemon juice
- 1½ Tbsp Worcestershire sauce
- 2 cloves garlic, minced
- ¼ cup olive oil
- ½ cup shredded Parmesan cheese
- ¾ tsp pepper
- 1 (18-oz) pkg romaine salad mix
- 3 cups chopped rotisserie chicken
Instructions
- Whisk together yogurt, lemon juice, Worcestershire sauce, and garlic in a large bowl; gradually whisk in oil.
- Stir in ¼ cup cheese and pepper. Add lettuce and chicken; toss. Sprinkle with ¼ cup cheese.
Side Dish Ingredients
- 6 tomatoes
- 2 Tbsp olive oil
- ½ Tbsp red wine vinegar
- 2 cloves garlic, minced
- ½ cup chopped fresh basil
- ¼ tsp kosher salt
Side Dish Instructions
- Slice tomatoes, and place in a large bowl.
- Whisk together oil, vinegar, garlic, basil, and salt. Pour over tomatoes; toss gently. Let stand 10 minutes.
