Skillet Ground Beef with Garlic and Oregano

Ingredients

  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 Tbsp olive oil
  • 2 lb ground beef
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 (14.5-oz) can diced tomatoes, drained

Instructions

  1. Cook onion and bell pepper in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until tender.
  2. Add beef, garlic, and oregano; cook 5 minutes or until browned and crumbly. Add tomatoes; bring to a boil. Cover and cook 15 minutes or until thickened. Season with salt and pepper to taste.

Side Dish Ingredients

  • 2 (5-oz) pkg arugula-baby spinach mix
  • ⅓ cup balsamic vinaigrette
  • ½ cup shredded Parmesan cheese

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
