Sheet Pan Sriracha-Ranch Chicken

Ingredients

  • 3 Tbsp olive oil
  • 2 lb chicken cutlets
  • 2 (12-oz) pkg broccoli, carrot, and cauliflower medley
  • 2 red bell peppers, cut into strips
  • 2 red onions, cut into wedges
  • 2 Tbsp jarred minced garlic
  • 2 (1-oz) envelopes organic Ranch seasoning mix (such as Simply Organic)
  • 2 Tbsp Sriracha hot sauce

Instructions

  1. Preheat oven to 425°F. Place 2 large rimmed baking sheets in oven while preheating.
  2. Toss together all ingredients in a large bowl. Arrange in an even layer on preheated pans.
  3. Bake 20 to 25 minutes or until chicken is done and vegetables are tender.
