Cauliflower Chicken Fried "Rice"

Ingredients

  • 1 tsp peanut oil plus 2 Tbsp, divided
  • 2 large eggs, beaten
  • 3 scallions, thinly sliced, whites and greens separated
  • 1 Tbsp grated fresh ginger
  • 1 Tbsp minced garlic
  • 1 lb boneless, skinless chicken thighs, trimmed and cut into ½-inch pieces
  • ½ cup diced red bell pepper
  • 1 cup snow peas, trimmed and halved
  • 4 cups cauliflower rice (see Note)
  • 3 Tbsp reduced-sodium tamari or soy sauce
  • 1 tsp sesame oil (optional)

Instructions

  1. Heat 1 tsp oil in a large flat-bottomed carbon-steel wok or large heavy skillet over high heat. Add eggs and cook, without stirring, until fully cooked on one side, about 30 seconds.
  2. Flip and cook until just cooked through, about 15 seconds. Transfer to a cutting board and cut into ½-inch pieces.
  3. Add 1 Tbsp oil to the pan along with scallion whites, ginger and garlic; cook, stirring, until the scallions have softened, about 30 seconds. Add chicken and cook, stirring, for 1 minute.
  4. Add bell pepper and snow peas; cook, stirring, until just tender, 2 to 4 minutes. Transfer everything to a large plate.
  5. Add the remaining 1 Tbsp oil to the pan; add cauliflower rice and stir until beginning to soften, about 2 minutes.
  6. Return the chicken mixture and eggs to the pan; add tamari (or soy sauce) and sesame oil (if using) and stir until well combined. Garnish with scallion greens.

Side Dish Ingredients

  • ¾ cup water
  • 2 Tbsp reduced-sodium soy sauce
  • 1 tsp cornstarch
  • 1 to 2 tsp Asian hot sauce, such as Sriracha
  • 1 Tbsp canola oil
  • 1 lb green and/or yellow wax beans, trimmed
  • 4 tsp minced fresh ginger
  • 3 large cloves garlic, minced
  • 1 Tbsp toasted sesame seeds

Side Dish Instructions

  1. Whisk water, soy sauce, cornstarch and hot sauce to taste in a small bowl.
  2. Heat oil in a wok or large skillet over medium-high heat. Add beans, ginger and garlic; cook, stirring, until fragrant, about 1 minute. Add the sauce mixture; cook, stirring frequently, until the beans are tender-crisp and coated with sauce, 4 to 6 minutes. Sprinkle with sesame seeds.
