Fish "Tacos" with Mango Salsa

Ingredients
- 1 mango, pitted and diced
- 1 red bell pepper, chopped
- ¼ cup chopped red onion
- ¼ cup chopped fresh cilantro
- 3 Tbsp fresh lime juice, divided
- ½ cup olive oil mayonnaise
- 1 tsp ground chipotle chile pepper
- 1 tsp ground cumin
- ¾ tsp paprika
- 3 cloves garlic, minced
- 1½ lb mahi mahi fillets (or use any white fish)
- 2 Tbsp olive oil
- 12 cabbage leaves
- 2 avocados, pitted and sliced
Instructions
- Combine mango, bell pepper, onion, cilantro, 2 Tbsp lime juice, and salt and pepper to taste in a bowl.
- Combine mayonnaise, 1 Tbsp lime juice, chipotle pepper, and salt and pepper to taste in a bowl.
- Combine cumin, paprika, and garlic; rub over fish. Sprinkle lightly with salt and pepper.
- Cook fish in hot oil in a large nonstick skillet over medium-high heat 2 to 3 minutes per side or until fish flakes with a fork.
- Break fish into large pieces. Serve on cabbage leaves with avocado, mayonnaise mixture, and mango mixture.
