Sweet Potato and Spinach Frittata

Ingredients
- 2 Tbsp avocado oil
- 1 (10-oz) pkg frozen diced sweet potatoes
- 1 red bell pepper, diced
- 1 clove garlic, minced
- 1 (5-oz) pkg baby spinach
- 8 large eggs
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat broiler. Heat oil in an ovenproof 10-inch skillet over medium-high heat. Add sweet potatoes. Cook 8 to 10 minutes or until tender and browned.
- Add bell pepper and garlic; cook 2 to 3 minutes or until bell pepper is tender. Stir in spinach; cook 1 to 2 minutes or until wilted.
- Whisk together eggs, salt, and pepper. Reduce heat to medium. Add eggs to skillet; stir quickly. Cook, without stirring, until eggs begin to set. Transfer to oven.
- Broil 3 to 5 minutes or until top is golden and eggs are firm. Cut into wedges to serve.
