Strawberry Prosecco Pops
Ingredients
- ½ cup sugar
- ½ cup water
- 1 (16-oz) pkg strawberries, hulled
- 1 cup chilled Prosecco
- 1 Tbsp fresh lime juice
Instructions
- Bring sugar and water to a boil in a small saucepan, stirring occasionally. Boil 2 minutes or until sugar is dissolved. Pour into a heat-proof bowl; cover and chill at least 4 hours.
- Process sugar mixture and strawberries in a blender until smooth.
- Stir in Prosecco and lime juice (mixture will bubble up). Once bubbles subside, pour into pop molds. Skim and discard any foam from surface.
- Cover molds, and freeze at least 8 hours.
