Slow Cooker Pork Carnitas

Ingredients

  • 3 lb boneless pork shoulder roast
  • 1 tsp salt
  • 2 onions, quartered
  • 4 cloves garlic, minced
  • ½ cup fresh orange juice
  • ¼ cup fresh lime juice
  • 2 Tbsp organic salt-free Southwest seasoning (or use organic fajita seasoning)
  • 2 (8-count) pkg frozen cassava-and-coconut grain-free tortillas
  • 2 avocados, pitted and sliced
  • 4 radishes, sliced
  • 1 cup refrigerated salsa
  • ¼ cup chopped fresh cilantro
  • Lime wedges

Instructions

  1. Rub pork with salt. Place pork, onions, garlic, orange juice, and lime juice in a 6- or 7-quart slow cooker. Cover and cook on LOW 8 hours or until tender.
  2. Shred pork with 2 forks, discarding fat. Toss with Southwest seasoning and salt and pepper to taste.
  3. Heat tortillas according to package directions. Serve pork in tortillas with avocado, radishes, salsa, and cilantro. Serve with lime wedges.
