Italian Sausage-and-Beef-Stuffed Peppers

Ingredients

  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 (24-oz) jar gluten-free marinara sauce
  • 1 tsp dried oregano
  • 6 large bell peppers (any color)

Instructions

  1. Preheat oven to 350°F. Cook beef and sausage in a large nonstick skillet over medium-high heat 5 minutes or until browned and crumbly; drain.
  2. Sauté onion and garlic in pan 5 minutes or until tender. Stir in beef mixture, marinara, and oregano; cook 2 to 3 minutes or until thoroughly heated.
  3. Cut bell peppers in half vertically; discard seeds and membranes. Spoon beef mixture into peppers. Place in a baking dish.
  4. Bake 20 minutes or until peppers are tender. Top with Spicy Arugula-and-Basil Salad before serving, if desired.

Side Dish Ingredients

  • 1 (5-oz) pkg arugula
  • ⅓ cup chopped red onion
  • 3 Tbsp chopped fresh basil
  • 2 Tbsp olive oil
  • 2 Tbsp Champagne vinegar (or use white wine vinegar)
  • ¼ tsp crushed red pepper

Side Dish Instructions

  1. Toss together all ingredients and salt to taste in a large bowl.
