Paprika-Rubbed Chicken
Skillet Corn and Lima Beans with Basil
Ingredients
- 2 lb boneless, skinless chicken breasts, pounded to an even thickness
- 3 Tbsp smoked paprika (or use paprika)
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
Instructions
- Rub chicken evenly with smoked paprika and sprinkle with salt and pepper.
- Heat oil in a large nonstick skillet over medium heat. Cook chicken 5 minutes per side or until done.

- 6 ears corn, husks removed
- 4 cups chicken broth, divided
- 2 Tbsp butter
- 1 (16-oz) pkg frozen lima beans, thawed
- 2 Tbsp chopped fresh basil
Side Dish Instructions
- Cut off corn kernels into a wide shallow bowl. Use back of knife to scrape pulp from corn cobs.
- Combine corn, 1 cup broth, and butter in a saucepan; bring to a boil. Reduce heat and simmer 10 to 12 minutes or until corn is tender and thickened, stirring frequently. Season to taste.
- Meanwhile, bring lima beans and 3 cups broth to a boil in a saucepan. Reduce heat, and simmer 10 minutes or until tender. Stir in basil and season to taste.
