Chicken with Jalapeño-Cherry Relish

Ingredients

  • ¼ cup white balsamic vinaigrette (such as Girard's)
  • 6 (6-oz) boneless, skinless chicken breasts
  • ¾ tsp salt
  • ¾ tsp pepper
  • 1¼ cups coarsely chopped frozen (thawed) cherries
  • 1 jalapeño pepper, seeded and minced
  • 2 Tbsp chopped fresh cilantro
  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice

Instructions

  1. Preheat broiler. Brush vinaigrette over chicken; place on a greased rimmed baking sheet. Sprinkle with ½ tsp each salt and pepper.
  2. Broil 15 minutes or until done.
  3. Combine cherries, jalapeño, cilantro, garlic, oil, lime juice, and ¼ tsp each salt and pepper. Serve cherry relish over chicken.

Side Dish Ingredients

  • 1½ cups diced onion
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ lb sweet potatoes, peeled and cubed
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté onion and garlic in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
  2. Add potatoes, cumin, salt, and pepper. Cover and cook 5 minutes; uncover and stir. Cook 5 minutes or until potatoes are browned and tender.
