Chicken with Jalapeño-Cherry Relish
Spiced Sweet Potato Hash
Ingredients
- ¼ cup white balsamic vinaigrette (such as Girard's)
- 6 (6-oz) boneless, skinless chicken breasts
- ¾ tsp salt
- ¾ tsp pepper
- 1¼ cups coarsely chopped frozen (thawed) cherries
- 1 jalapeño pepper, seeded and minced
- 2 Tbsp chopped fresh cilantro
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1 Tbsp lime juice
Instructions
- Preheat broiler. Brush vinaigrette over chicken; place on a greased rimmed baking sheet. Sprinkle with ½ tsp each salt and pepper.
- Broil 15 minutes or until done.
- Combine cherries, jalapeño, cilantro, garlic, oil, lime juice, and ¼ tsp each salt and pepper. Serve cherry relish over chicken.

- 1½ cups diced onion
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1½ lb sweet potatoes, peeled and cubed
- ½ tsp ground cumin
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté onion and garlic in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
- Add potatoes, cumin, salt, and pepper. Cover and cook 5 minutes; uncover and stir. Cook 5 minutes or until potatoes are browned and tender.
