One-Pan Sausage, Peppers, and Potatoes

Ingredients

  • 1 (12-oz) pkg smoked sausage
  • 2 lb small red potatoes, quartered
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 sweet onions, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 3 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • ½ cup grated Parmesan cheese (from a can)

Instructions

  1. Preheat oven to 425°F.
  2. Toss together all ingredients on a greased rimmed baking sheet; spread in a single layer.
  3. Bake 25 to 30 minutes or until vegetables are tender.
  4. Slice sausage, and serve with vegetables. Top servings with cheese.
