Chilaquiles Verde

Ingredients

  • ⅓ lb ground sirloin
  • ½ cup chopped red onion
  • 1 zucchini, chopped
  • 1 cup no-salt-added black beans, drained and rinsed
  • ½ cup mild salsa verde
  • 3 cups baby spinach
  • 2 Tbsp water
  • 1 (1.5-oz) pkg brown rice tortilla chips (such as Lundberg)
  • ¼ cup crumbled feta cheese ( or use cotija cheese)

Instructions

  1. Cook beef and onion in a medium saucepan over medium-high heat 8 minutes or until beef is browned and crumbly; drain and return to pan.
  2. Add zucchini and beans; sauté 3 minutes. Add salsa, spinach, and water; bring to a boil. Reduce heat, and gently stir in chips, coating with sauce.
  3. Cover and simmer 3 minutes. Remove from heat; let stand 5 minutes. Sprinkle with cheese. Serve immediately.

  • 1 mango, pitted and sliced
  • ½ tsp grated lemon rind
  • 1 tsp lemon juice

  1. Toss together all ingredients.
