Chilaquiles Verde

Ingredients
- ⅓ lb ground sirloin
- ½ cup chopped red onion
- 1 zucchini, chopped
- 1 cup no-salt-added black beans, drained and rinsed
- ½ cup mild salsa verde
- 3 cups baby spinach
- 2 Tbsp water
- 1 (1.5-oz) pkg brown rice tortilla chips (such as Lundberg)
- ¼ cup crumbled feta cheese ( or use cotija cheese)
Instructions
- Cook beef and onion in a medium saucepan over medium-high heat 8 minutes or until beef is browned and crumbly; drain and return to pan.
- Add zucchini and beans; sauté 3 minutes. Add salsa, spinach, and water; bring to a boil. Reduce heat, and gently stir in chips, coating with sauce.
- Cover and simmer 3 minutes. Remove from heat; let stand 5 minutes. Sprinkle with cheese. Serve immediately.

- ½ tsp grated lemon rind
- 1 tsp lemon juice
