Tex-Mex Tamale Pie
Southwest Salad
Ingredients
- ¾ lb lean ground beef
- ½ (8-oz) pkg diced yellow onion
- 1 tsp chili powder
- 1 (10-oz) can enchilada sauce
- 1 (8.5-oz) pkg corn muffin mix
- ½ cup shredded sharp Cheddar cheese
- ⅓ cup milk
- 1 large egg
Instructions
- Preheat oven to 400°F.
- Cook ground beef and onion in a cast-iron skillet 5 minutes or until browned; stir in chili powder and enchilada sauce.
- Stir together muffin mix, cheese, milk and egg; dollop and spread over beef mixture.
- Bake 20 minutes or until a wooden toothpick inserted in cornbread comes out clean.
