Ingredients

  • ¾ lb lean ground beef
  • ½ (8-oz) pkg diced yellow onion
  • 1 tsp chili powder
  • 1 (10-oz) can enchilada sauce
  • 1 (8.5-oz) pkg corn muffin mix
  • ½ cup shredded sharp Cheddar cheese
  • ⅓ cup milk
  • 1 large egg

Instructions

  1. Preheat oven to 400°F.
  2. Cook ground beef and onion in a cast-iron skillet 5 minutes or until browned; stir in chili powder and enchilada sauce.
  3. Stir together muffin mix, cheese, milk and egg; dollop and spread over beef mixture.
  4. Bake 20 minutes or until a wooden toothpick inserted in cornbread comes out clean.
