Spice-Rubbed Chicken
Curried Lentils and Brown Rice
Ingredients
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp ground cumin
- ¼ tsp cayenne pepper
- 1 clove garlic, minced
- 3 bone-in, skinless chicken breasts, halved crosswise
- 2 Tbsp olive oil
Instructions
- Stir together paprika, oregano, cumin, pepper, and garlic; rub on chicken. Cover and chill 30 minutes to 1 hour.
- Sprinkle chicken lightly with salt. Cook in hot oil in a large, deep nonstick skillet over medium heat 3 minutes per side; cover and cook 15 minutes or until done.

- 1½ cups brown rice
- 2 carrots, chopped
- 1 onion, chopped
- 2 Tbsp olive oil
- 1 clove garlic, minced
- 1 Tbsp curry powder
- 1½ cups lentils
- 6 cups low-sodium chicken broth
Side Dish Instructions
- Cook rice according to package directions.
- Sauté carrots and onion in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add garlic and curry powder. Sauté 1 minute.
- Add lentils and broth. Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes or until lentils are tender.
