Spice-Rubbed Chicken

Curried Lentils and Brown Rice

Ingredients

  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp ground cumin
  • ¼ tsp cayenne pepper
  • 1 clove garlic, minced
  • 3 bone-in, skinless chicken breasts, halved crosswise
  • 2 Tbsp olive oil

Instructions

  1. Stir together paprika, oregano, cumin, pepper, and garlic; rub on chicken. Cover and chill 30 minutes to 1 hour.
  2. Sprinkle chicken lightly with salt. Cook in hot oil in a large, deep nonstick skillet over medium heat 3 minutes per side; cover and cook 15 minutes or until done.

  • 1½ cups brown rice
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • 1 Tbsp curry powder
  • 1½ cups lentils
  • 6 cups low-sodium chicken broth

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Sauté carrots and onion in hot oil in a Dutch oven over medium heat 5 minutes or until tender; add garlic and curry powder. Sauté 1 minute.
  3. Add lentils and broth. Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes or until lentils are tender.
