Falafel Pita Sandwiches

Ingredients

  • 2 (15.5-oz) cans no-salt-added chickpeas, drained and rinsed
  • ¼ cup chopped fresh parsley
  • 1 large egg
  • 2 Tbsp lemon juice
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup whole wheat panko breadcrumbs
  • 3 Tbsp olive oil
  • 6 lettuce leaves
  • ½ cup thinly sliced red onion
  • 3 whole wheat pita bread rounds, halved

Instructions

  1. Pulse chickpeas, parsley, egg, lemon juice, cumin, salt, and pepper in a food processor until smooth; stir in panko. Shape into 12 (2½-inch) patties.
  2. Cook patties in hot oil in a large nonstick skillet over medium heat 2 minutes per side. Place 2 patties, 1 lettuce leaf, and onions in each pita half.

  • 1 seedless cucumber, peeled, halved, and sliced
  • 1 pint organic grape tomatoes, halved
  • ⅓ cup plain Greek yogurt
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Combine cucumber, tomatoes, yogurt, garlic, salt, and pepper in a medium bowl; cover and chill until ready to serve.
