Bacon-Basil Drop Biscuits with Goat Cheese and Blackberry Spread

Ingredients

  • 6 slices center-cut bacon
  • 1 cup white whole wheat flour
  • 1 tsp baking powder
  • ½ tsp sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup cold fat-free buttermilk
  • 2 Tbsp butter, melted
  • 1 Tbsp chopped fresh basil
  • ½ (4-oz) log goat cheese, softened (or use cream cheese)
  • ¼ cup all-natural blackberry fruit spread

Instructions

  1. Preheat oven to 450°F. Line a baking sheet with parchment paper.
  2. Cook bacon in a large nonstick skillet 5 minutes or until crisp; drain on paper towels. Crumble bacon.
  3. Meanwhile, whisk together flour, baking powder, sugar, baking soda, and salt in a large bowl. Add buttermilk and butter; stir just until moistened.
  4. Gently stir in bacon and basil. Drop dough onto baking sheet, making 4 mounds.
  5. Bake 10 to 12 minutes or until lightly golden.
  6. Cut biscuits in half horizontally. Spread cheese and fruit over bottom half of biscuits; cover with biscuit tops.
