Bacon-Basil Drop Biscuits with Goat Cheese and Blackberry Spread

Ingredients
- 6 slices center-cut bacon
- 1 cup white whole wheat flour
- 1 tsp baking powder
- ½ tsp sugar
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup cold fat-free buttermilk
- 2 Tbsp butter, melted
- 1 Tbsp chopped fresh basil
- ½ (4-oz) log goat cheese, softened (or use cream cheese)
- ¼ cup all-natural blackberry fruit spread
Instructions
- Preheat oven to 450°F. Line a baking sheet with parchment paper.
- Cook bacon in a large nonstick skillet 5 minutes or until crisp; drain on paper towels. Crumble bacon.
- Meanwhile, whisk together flour, baking powder, sugar, baking soda, and salt in a large bowl. Add buttermilk and butter; stir just until moistened.
- Gently stir in bacon and basil. Drop dough onto baking sheet, making 4 mounds.
- Bake 10 to 12 minutes or until lightly golden.
- Cut biscuits in half horizontally. Spread cheese and fruit over bottom half of biscuits; cover with biscuit tops.
