Sheet Pan Chicken Souvlaki and Potatoes
Creamy CucumbersIngredients
- 2 lb chicken cutlets
- 1 (22-oz) pkg frozen red potato wedges with olive oil and garlic (such as Alexia)
- 2 red bell peppers, cut into strips
- 3 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- ½ Tbsp Greek seasoning
- 1 lemon, thinly sliced
- ½ cup crumbled reduced-fat feta cheese
- ½ cup pitted kalamata olives
Instructions
- Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
- Toss together chicken, potatoes, bell peppers, oil, lemon juice, and seasoning in a bowl. Arrange in an even layer on preheated pan. Top with lemon slices.
- Bake 20 to 25 minutes or until chicken is done and potatoes are golden. Sprinkle with cheese and olives.
Side Dish Ingredients
- 2 seedless cucumbers
- ½ tsp salt
- ⅔ cup 2% reduced-fat plain Greek yogurt
- 3 cloves garlic, minced
- ½ tsp pepper
Side Dish Instructions
- Cut cucumbers into half-moon slices. Sprinkle with salt; let stand 10 minutes. Pat dry.
- Combine yogurt, garlic, and pepper; add cucumbers. Toss.
