Summer Gazpacho
Shrimp, Feta, and Basil Relish
Ingredients
- 1 seedless cucumber, cut into chunks
- 2 bell peppers, cut into chunks
- 3 large tomatoes, quartered
- 1 red onion, cut into wedges
- 2 Tbsp jarred minced garlic
- 4 cups tomato juice
- ¼ cup white wine vinegar
- ¼ cup olive oil
- ½ tsp kosher salt
- 1 tsp pepper
Instructions
- Process first 5 ingredients in a food processor or blender until coarsely chopped (do not puree). Pour into a large bowl or pitcher.
- Stir in juice, vinegar, oil, salt, and pepper. Divide among 6 bowls.
Side Dish Ingredients
- 1 lb peeled and deveined, large wild-caught cooked shrimp (see Note)
- 1 (1-oz) pkg fresh basil, thinly sliced
- 1 pint multicolored cherry tomatoes, halved
- ½ cup crumbled feta cheese
- 2 Tbsp olive oil
- ⅛ tsp kosher salt
- ¼ tsp pepper
Side Dish Instructions
- Toss together all ingredients in a bowl.
