Summer Gazpacho

Shrimp, Feta, and Basil Relish

Ingredients

  • 1 seedless cucumber, cut into chunks
  • 2 bell peppers, cut into chunks
  • 3 large tomatoes, quartered
  • 1 red onion, cut into wedges
  • 2 Tbsp jarred minced garlic
  • 4 cups tomato juice
  • ¼ cup white wine vinegar
  • ¼ cup olive oil
  • ½ tsp kosher salt
  • 1 tsp pepper

Instructions

  1. Process first 5 ingredients in a food processor or blender until coarsely chopped (do not puree). Pour into a large bowl or pitcher.
  2. Stir in juice, vinegar, oil, salt, and pepper. Divide among 6 bowls.

Side Dish Ingredients

  • 1 lb peeled and deveined, large wild-caught cooked shrimp (see Note)
  • 1 (1-oz) pkg fresh basil, thinly sliced
  • 1 pint multicolored cherry tomatoes, halved
  • ½ cup crumbled feta cheese
  • 2 Tbsp olive oil
  • ⅛ tsp kosher salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
