Sheet Pan Sriracha-Ranch Chicken

Ingredients

  • 1½ Tbsp olive oil
  • ⅔ lb chicken cutlets
  • 1 (12-oz) pkg broccoli, carrot, and cauliflower medley
  • 1 red bell pepper, cut into strips
  • ½ red onion, cut into wedges
  • ½ Tbsp jarred minced garlic
  • 2 Tbsp organic Ranch dressing mix (such as Simply Organic)
  • ½ Tbsp Sriracha hot sauce

Instructions

  1. Preheat oven to 425°F. Place 1 large rimmed baking sheet in oven while preheating.
  2. Toss together all ingredients in a bowl. Arrange in an even layer on preheated pan.
  3. Bake 20 to 25 minutes or until chicken is done and vegetables are tender.
