Lemon-Garlic Pasta
Balsamic Wilted Spinach
Ingredients
- 1 (16-oz) pkg whole wheat spaghetti
- 3 Tbsp olive oil
- 3 cloves garlic, minced
- ⅓ cup pine nuts
- ¾ cup freshly grated Parmesan cheese
- 3 Tbsp fresh lemon juice
- ¾ cup thinly sliced fresh basil
Instructions
- Cook pasta according to package directions.
- Heat oil in a small skillet over medium-high heat; add garlic, and sauté 1 minute or just until garlic begins to brown.
- Add pine nuts; cook 2 minutes until toasted, stirring constantly.
- Combine pasta, garlic, pine nuts, Parmesan cheese, lemon juice and basil in large bowl; toss to coat.

- 1 (10-oz) pkg baby spinach
- ¼ cup balsamic vinegar
- ¾ tsp kosher salt
- ¼ tsp crushed red pepper
Side Dish Instructions
- Heat oil in a large skillet over medium heat.
- Add garlic and spinach; cook 6 minutes or until spinach is wilted, stirring frequently. Stir in balsamic vinegar, salt and crushed red pepper.
