Summer Melon Salad

Ingredients
- 1½ cups cubed seedless watermelon
- 1½ cups cubed cantaloupe
- 2 Tbsp fresh mint leaves
- 1 Tbsp fresh lemon juice
- 2 tsp extra virgin olive oil
- ⅛ tsp kosher salt
- 3 cups baby arugula
- ¼ cup glazed walnuts
- 1 oz thinly sliced prosciutto
Instructions
- Toss together watermelon, cantaloupe, mint, lemon juice, oil, and salt in a bowl.
- Arrange arugula on a platter; top with melon mixture. Sprinkle with nuts; top with prosciutto.
Side Dish Ingredients
- 3 oz fresh mozzarella cheese, thinly sliced or torn into pieces
- 2 tsp extra virgin olive oil
- 1 tsp basil paste
- 1 clove garlic, thinly sliced
- ⅛ tsp crushed red pepper
Side Dish Instructions
- Combine all ingredients in a bowl. Let stand 20 minutes.
