Summer Melon Salad

Ingredients

  • 1½ cups cubed seedless watermelon
  • 1½ cups cubed cantaloupe
  • 2 Tbsp fresh mint leaves
  • 1 Tbsp fresh lemon juice
  • 2 tsp extra virgin olive oil
  • ⅛ tsp kosher salt
  • 3 cups baby arugula
  • ¼ cup glazed walnuts
  • 1 oz thinly sliced prosciutto

Instructions

  1. Toss together watermelon, cantaloupe, mint, lemon juice, oil, and salt in a bowl.
  2. Arrange arugula on a platter; top with melon mixture. Sprinkle with nuts; top with prosciutto.

Side Dish Ingredients

  • 3 oz fresh mozzarella cheese, thinly sliced or torn into pieces
  • 2 tsp extra virgin olive oil
  • 1 tsp basil paste
  • 1 clove garlic, thinly sliced
  • ⅛ tsp crushed red pepper

Side Dish Instructions

  1. Combine all ingredients in a bowl. Let stand 20 minutes.
