Sheet Pan Salmon and Succotash

Ingredients

  • 1 (2-lb) skinless salmon fillet
  • 3 Tbsp olive oil, divided
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 1 (16-oz) pkg small okra, halved lengthwise
  • 2 cups corn kernels (about 4 ears; or use frozen corn)
  • 2 cups frozen lima beans
  • 1 Tbsp jarred minced garlic
  • 2 pints multicolored grape tomatoes, halved
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat oven to 450°F. Place 2 large rimmed baking sheets in oven while preheating.
  2. Drizzle salmon with 1 Tbsp oil, and sprinkle with ½ tsp each salt and pepper; place on 1 preheated baking sheet.
  3. Combine okra, corn, lima beans, 2 Tbsp oil, garlic, and ½ tsp each salt and pepper; spread on second preheated baking sheet.
  4. Bake 18 to 20 minutes or until fish flakes with a fork and vegetables are browned, adding tomatoes during last 5 minutes of baking. Remove from oven; sprinkle with basil.
