Chicken and Refried Black Bean Tostadas

Ingredients

  • 2½ cups shredded rotisserie chicken
  • 1½ tsp ground cumin
  • 1½ tsp chili powder
  • 2 Tbsp fresh lime juice
  • 6 (0.63-oz) tostada shells (such as Guerrero)
  • 1 (16-oz) can refried black beans (such as Bush's Best)
  • 1½ cups shredded Mexican-blend cheese
  • ¼ cup sliced radishes

Instructions

  1. Preheat broiler. Combine chicken, cumin, and chili powder in a microwave-safe bowl. Microwave at HIGH 30 seconds or until thoroughly heated. Toss with lime juice.
  2. Place tostada shells in a single layer on a large baking sheet. Spread beans on shells; top with chicken and cheese.
  3. Broil 1 to 2 minutes or until cheese melts and begins to brown. Top each tostada with radishes.

  • 1 (16-oz) pkg tricolor coleslaw
  • 1 (10-oz) pkg diced mango
  • ¼ cup chopped fresh cilantro
  • 1 tsp grated lime rind
  • 2 Tbsp fresh lime juice
  • ¼ cup extra virgin olive oil
  • 2 Tbsp honey
  • ¼ tsp kosher salt

Side Dish Instructions

  1. Combine slaw, mango, and cilantro in a bowl. Whisk together lime rind, juice, oil, honey, and salt; drizzle over slaw.
