Chicken and Refried Black Bean Tostadas
Mango-Lime SlawIngredients
- 2½ cups shredded rotisserie chicken
- 1½ tsp ground cumin
- 1½ tsp chili powder
- 2 Tbsp fresh lime juice
- 6 (0.63-oz) tostada shells (such as Guerrero)
- 1 (16-oz) can refried black beans (such as Bush's Best)
- 1½ cups shredded Mexican-blend cheese
- ¼ cup sliced radishes
Instructions
- Preheat broiler. Combine chicken, cumin, and chili powder in a microwave-safe bowl. Microwave at HIGH 30 seconds or until thoroughly heated. Toss with lime juice.
- Place tostada shells in a single layer on a large baking sheet. Spread beans on shells; top with chicken and cheese.
- Broil 1 to 2 minutes or until cheese melts and begins to brown. Top each tostada with radishes.
Side Dish Ingredients
- 1 (16-oz) pkg tricolor coleslaw
- 1 (10-oz) pkg diced mango
- ¼ cup chopped fresh cilantro
- 1 tsp grated lime rind
- 2 Tbsp fresh lime juice
- ¼ cup extra virgin olive oil
- 2 Tbsp honey
- ¼ tsp kosher salt
Side Dish Instructions
- Combine slaw, mango, and cilantro in a bowl. Whisk together lime rind, juice, oil, honey, and salt; drizzle over slaw.
