Thai Chicken Burgers with Broccoli Slaw
Sweet Potato ChipsIngredients
- 2 Tbsp finely chopped shallot
- ¼ cup chopped fresh cilantro, divided
- 2 tsp refrigerated minced ginger
- 1½ Tbsp low-sodium soy sauce
- ½ lb ground chicken
- ⅓ cup whole wheat panko breadcrumbs
- 2 cups broccoli slaw
- 2 whole wheat hamburger buns, toasted
Instructions
- Preheat grill or grill pan to medium-high heat. Whisk together shallot, 2 Tbsp cilantro, ginger, and soy sauce in a bowl. Transfer half of mixture to a second bowl.
- Add chicken and panko to one portion of shallot mixture; mix together using your hands, and gently shape into 2 patties.
- Grill patties, without grill lid, 5 to 6 minutes per side or until centers are no longer pink.
- Toss together slaw, 2 Tbsp cilantro, and remaining portion of shallot mixture in a bowl. Serve burgers on buns with slaw.
Side Dish Ingredients
- 2 oz kettle-cooked sweet potato chips

- Serve chips with entrée.
