Pork Chops with Shallot-Garlic Sauce

Ingredients

  • 2 (6-oz) boneless pork chops, well trimmed
  • 1 Tbsp olive oil
  • ½ shallot, thinly sliced
  • 2 cloves garlic, minced
  • ¼ cup dry white wine (or use low-sodium chicken broth)
  • ½ Tbsp whole-grain mustard
  • ¼ tsp grated lemon rind
  • ¼ cup water
  • ½ Tbsp butter

Instructions

  1. Sprinkle pork lightly with salt and pepper. Cook in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Remove from skillet; keep warm.
  2. Add shallot and garlic to skillet. Cook over medium heat 3 minutes. Add wine, mustard, lemon rind, and water; cook, stirring occasionally, 5 minutes or until liquid is reduced by half, scraping browned bits from skillet.
  3. Stir in butter until melted. Season with salt and pepper to taste. Serve pork with sauce.

  • 1 pint organic grape tomatoes
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ¼ lb green beans, trimmed and cut into 1-inch pieces

Side Dish Instructions

  1. Preheat broiler. Toss together tomatoes, oil, and garlic on a rimmed baking sheet.
  2. Broil 5 minutes. Stir in beans; broil 3 minutes or until beans are just tender. Season with salt and pepper to taste.
