Cajun Sloppy Joes
Sautéed Brussels Sprouts
Ingredients
- 1¾ lb grass-fed ground beef
- 1 Tbsp coconut oil (or use avocado oil)
- 1 medium onion, chopped
- 1 red bell pepper, seeded and chopped
- 1 (12-oz) can tomato paste, need ½ can
- ½ cup organic chicken broth
- 1 tsp apple cider vinegar
- 1½ Tbsp Cajun seasoning
- 1 head Bibb or butter lettuce, leaves separated
Instructions
- Cook ground beef in a large nonstick skillet over medium heat 8 minutes or until browned; drain and set aside.
- Melt oil in skillet; add onion and bell pepper.
- Cook 5 minutes or until onion is tender.
- Stir in tomato paste, chicken broth, vinegar and Cajun seasoning.
- Return beef to skillet, and cook 10 minutes or until sauce thickens.
- Spoon beef mixture onto lettuce leaves to serve.
Side Dish Ingredients
- 1½ lb Brussels sprouts, ends trimmed
- 2 Tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 3 Tbsp apple cider vinegar
- 1 tsp kosher salt
- 1 tsp pepper
- 1 tsp dried thyme
Side Dish Instructions
- Thinly slice Brussels sprouts.
- Heat oil in a large nonstick skillet over medium heat. Add garlic and Brussels sprouts. Cook 2 minutes, stirring constantly.
- Add vinegar, salt, pepper and thyme. Cook 5 to 7 minutes or until vinegar is evaporated.
