Cajun Sloppy Joes

Sautéed Brussels Sprouts

Ingredients

  • 1¾ lb grass-fed ground beef
  • 1 Tbsp coconut oil (or use avocado oil)
  • 1 medium onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 (12-oz) can tomato paste, need ½ can
  • ½ cup organic chicken broth
  • 1 tsp apple cider vinegar
  • 1½ Tbsp Cajun seasoning
  • 1 head Bibb or butter lettuce, leaves separated

Instructions

  1. Cook ground beef in a large nonstick skillet over medium heat 8 minutes or until browned; drain and set aside.
  2. Melt oil in skillet; add onion and bell pepper.
  3. Cook 5 minutes or until onion is tender.
  4. Stir in tomato paste, chicken broth, vinegar and Cajun seasoning.
  5. Return beef to skillet, and cook 10 minutes or until sauce thickens.
  6. Spoon beef mixture onto lettuce leaves to serve.

Side Dish Ingredients

  • 1½ lb Brussels sprouts, ends trimmed
  • 2 Tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 3 Tbsp apple cider vinegar
  • 1 tsp kosher salt
  • 1 tsp pepper
  • 1 tsp dried thyme

Side Dish Instructions

  1. Thinly slice Brussels sprouts.
  2. Heat oil in a large nonstick skillet over medium heat. Add garlic and Brussels sprouts. Cook 2 minutes, stirring constantly.
  3. Add vinegar, salt, pepper and thyme. Cook 5 to 7 minutes or until vinegar is evaporated.
