Green Pepper Steak

Ingredients

  • 1½ lb boneless beef sirloin, cut into very thin strips
  • 2 Tbsp olive oil, divided
  • 1½ cups sliced red onion
  • 3 cups sliced green bell pepper
  • ¾ cup water
  • 3 cloves garlic, minced
  • 2 Tbsp cornstarch
  • ¼ cup low-sodium teriyaki sauce
  • 2 cups chopped tomatoes

Instructions

  1. Cook beef in 2 batches, in 2 tsp hot oil per batch in a large skillet over high heat 1 to 2 minutes or just until beef begins to brown. Remove from skillet.
  2. Reduce heat to medium-high, and sauté onion in 2 tsp hot oil in skillet until translucent. Stir in bell pepper, water, garlic, and beef. Reduce heat to medium-low; cover and cook 4 minutes or until bell pepper is crisp-tender.
  3. Stir together cornstarch and teriyaki sauce until cornstarch dissolves.
  4. Increase heat to medium-high, and stir tomatoes and teriyaki mixture into beef mixture. Cook 2 minutes or until thickened.

Side Dish Ingredients

  • 1 cup instant brown rice
  • 2 Tbsp light butter 
  • 1½ tsp grated ginger
  • ½ tsp salt

Side Dish Instructions

  1. Prepare rice according to package directions; toss with butter, ginger, and salt.
