Italian Grilled Cheese

Ingredients

  • 1 cup shredded Parmesan cheese
  • ½ cup reduced-fat mayonnaise
  • ¾ tsp yellow mustard
  • 12 slices light whole wheat sandwich bread (such as Pepperidge Farm)
  • ⅓ cup finely chopped onion
  • ⅓ cup chopped fresh basil
  • 3 Roma tomatoes, thinly sliced
  • 2 Tbsp olive oil

Instructions

  1. Coat both sides of bread with cooking spray. Stir together cheese, mayonnaise, and mustard. Spread on 6 bread slices; top with onion, basil, tomatoes, and remaining bread. Gently press down to adhere.
  2. Cook sandwiches, in 2 batches, in hot oil in a large skillet over medium heat 2 minutes per side or until golden brown and cheese is melted.

Side Dish Ingredients

  • ⅓ cup strawberry fruit spread
  • 6 cups strawberries, halved
  • 1½ tsp vanilla extract

Side Dish Instructions

  1. Microwave fruit spread in a microwave-safe bowl at HIGH 20 seconds or until melted.
  2. Stir in strawberries and vanilla until blended.
