Italian Grilled Cheese
Vanilla-Glazed Strawberries
Ingredients
- 1 cup shredded Parmesan cheese
- ½ cup reduced-fat mayonnaise
- ¾ tsp yellow mustard
- 12 slices light whole wheat sandwich bread (such as Pepperidge Farm)
- ⅓ cup finely chopped onion
- ⅓ cup chopped fresh basil
- 3 Roma tomatoes, thinly sliced
- 2 Tbsp olive oil
Instructions
- Coat both sides of bread with cooking spray. Stir together cheese, mayonnaise, and mustard. Spread on 6 bread slices; top with onion, basil, tomatoes, and remaining bread. Gently press down to adhere.
- Cook sandwiches, in 2 batches, in hot oil in a large skillet over medium heat 2 minutes per side or until golden brown and cheese is melted.
Side Dish Ingredients
- ⅓ cup strawberry fruit spread
- 6 cups strawberries, halved
- 1½ tsp vanilla extract
Side Dish Instructions
- Microwave fruit spread in a microwave-safe bowl at HIGH 20 seconds or until melted.
- Stir in strawberries and vanilla until blended.
