Pull-Apart Hawaiian Barbecue Chicken Sliders

Ingredients

  • 4 honey wheat slider buns, split (such as King's Hawaiian)
  • 1 cup shredded rotisserie chicken breast (without skin)
  • 2 Tbsp barbecue sauce
  • ½ Tbsp Dijon mustard
  • ⅓ cup crushed pineapple in juice, drained
  • 2 Tbsp diced red onion
  • ¼ cup shredded part-skim mozzarella cheese

Instructions

  1. Preheat oven to 350°F. Generously coat an 8-inch baking dish with cooking spray. Arrange bottom halves of buns in dish.
  2. Toss together chicken, barbecue sauce, and mustard in a bowl. Toss together pineapple and onion in a second bowl.
  3. Arrange chicken mixture on buns in pan; top with pineapple mixture and cheese. Add bun tops, gently pressing down. Cover with foil.
  4. Bake 15 minutes. Uncover and bake 5 minutes or until cheese is melted and sliders are thoroughly heated.

Side Dish Ingredients

  • 2 cups broccoli slaw
  • 1 cup baby spinach
  • ⅓ cup seedless red grapes, halved
  • 2 Tbsp reduced-fat olive oil mayonnaise
  • 1 tsp honey
  • 1 tsp apple cider vinegar
  • Dash of kosher salt

Side Dish Instructions

  1. Combine slaw, spinach, and grapes in a bowl.
  2. Whisk together mayonnaise, honey, vinegar, and salt; pour over broccoli mixture; toss.
