Pull-Apart Hawaiian Barbecue Chicken Sliders
Creamy Broccoli-Spinach Slaw
Ingredients
- 4 honey wheat slider buns, split (such as King's Hawaiian)
- 1 cup shredded rotisserie chicken breast (without skin)
- 2 Tbsp barbecue sauce
- ½ Tbsp Dijon mustard
- ⅓ cup crushed pineapple in juice, drained
- 2 Tbsp diced red onion
- ¼ cup shredded part-skim mozzarella cheese
Instructions
- Preheat oven to 350°F. Generously coat an 8-inch baking dish with cooking spray. Arrange bottom halves of buns in dish.
- Toss together chicken, barbecue sauce, and mustard in a bowl. Toss together pineapple and onion in a second bowl.
- Arrange chicken mixture on buns in pan; top with pineapple mixture and cheese. Add bun tops, gently pressing down. Cover with foil.
- Bake 15 minutes. Uncover and bake 5 minutes or until cheese is melted and sliders are thoroughly heated.
Side Dish Ingredients
- 2 cups broccoli slaw
- 1 cup baby spinach
- ⅓ cup seedless red grapes, halved
- 2 Tbsp reduced-fat olive oil mayonnaise
- 1 tsp honey
- 1 tsp apple cider vinegar
- Dash of kosher salt
Side Dish Instructions
- Combine slaw, spinach, and grapes in a bowl.
- Whisk together mayonnaise, honey, vinegar, and salt; pour over broccoli mixture; toss.
