Ground Beef-Sweet Potato Sloppy Joe Wraps

Ingredients

  • 1½ lb grass-fed ground beef
  • 1 Tbsp coconut oil
  • 1 medium onion, chopped
  • 1 sweet potato, peeled and shredded
  • 2 cloves garlic, minced
  • 1 (6-oz) can tomato paste
  • ½ cup organic chicken broth
  • 2 tsp balsamic vinegar
  • 1 Tbsp Italian seasoning
  • ¼ tsp pepper
  • 2 heads Bibb or butter lettuce, leaves separated

Instructions

  1. Cook ground beef in a large nonstick skillet over medium heat 8 minutes or until browned; drain and set aside.
  2. Melt oil in skillet; add onion, sweet potato and garlic. Cook 5 minutes or until vegetables are tender.
  3. Stir in tomato paste, chicken broth, vinegar, Italian seasoning and pepper. Return beef to skillet, and cook 10 minutes or until sauce thickens.
  4. Spoon beef mixture onto lettuce leaves; roll up.

Side Dish Ingredients

  • 2 Tbsp coconut oil (or use avocado oil)
  • 2 cloves garlic, minced
  • 2 lb Brussels sprouts, thinly sliced
  • 2 tsp chopped fresh thyme
  • 2 Tbsp balsamic vinegar
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Heat oil in a large skillet over medium-high heat; add garlic, Brussels sprouts, and thyme.
  2. Sauté 5 to 6 minutes or until Brussels sprouts are wilted; stir in vinegar, salt and pepper.
