Ground Beef-Sweet Potato Sloppy Joe Wraps
Sautéed Shaved Brussels Sprouts
Ingredients
- 1½ lb grass-fed ground beef
- 1 Tbsp coconut oil
- 1 medium onion, chopped
- 1 sweet potato, peeled and shredded
- 2 cloves garlic, minced
- 1 (6-oz) can tomato paste
- ½ cup organic chicken broth
- 2 tsp balsamic vinegar
- 1 Tbsp Italian seasoning
- ¼ tsp pepper
- 2 heads Bibb or butter lettuce, leaves separated
Instructions
- Cook ground beef in a large nonstick skillet over medium heat 8 minutes or until browned; drain and set aside.
- Melt oil in skillet; add onion, sweet potato and garlic. Cook 5 minutes or until vegetables are tender.
- Stir in tomato paste, chicken broth, vinegar, Italian seasoning and pepper. Return beef to skillet, and cook 10 minutes or until sauce thickens.
- Spoon beef mixture onto lettuce leaves; roll up.

- 2 Tbsp coconut oil (or use avocado oil)
- 2 cloves garlic, minced
- 2 lb Brussels sprouts, thinly sliced
- 2 tsp chopped fresh thyme
- 2 Tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Heat oil in a large skillet over medium-high heat; add garlic, Brussels sprouts, and thyme.
- Sauté 5 to 6 minutes or until Brussels sprouts are wilted; stir in vinegar, salt and pepper.
