Creole Turkey Sausage-Shrimp Ragu
Microwave Spaghetti Squash "Noodles"
Ingredients
- 1 Tbsp coconut oil
- ½ (14-oz) pkg turkey smoked sausage, cut into ½-inch pieces
- 1 small onion, finely chopped
- 1 small green bell pepper, chopped
- 2 cloves garlic, minced
- 2 to 3 tsp Creole seasoning
- 2 tsp chopped fresh thyme
- ½ lb large shrimp, peeled and deveined
- ½ (14.5-oz) can fire-roasted diced tomatoes, drained
Instructions
- Heat oil in a large skillet over medium heat.
- Cook sausage 5 minutes or until browned.
- Add onion, bell pepper, garlic, seasoning and thyme; cook 5 minutes, stirring often.
- Add shrimp and tomatoes.
- Cook 3 to 5 minutes or until shrimp turn pink.
- Serve over spaghetti squash.
Side Dish Ingredients
- 1 spaghetti squash
- 1 Tbsp extra virgin olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cut squash in half, and remove seeds.
- Place squash, cut sides down, in a microwavable dish.
- Cover with plastic wrap; cut a small slit in plastic wrap.
- Cook on HIGH 8 to 12 minutes or until tender; let stand 10 minutes.
- Remove spaghetti-like strands with a fork.
- Toss squash strands with oil, salt and pepper.
