Zesty Pasta Salad with Bacon and Grape Tomatoes
French Bread with Basil Butter
Ingredients
- 4 oz uncooked penne pasta
- 1 cup grape tomatoes, halved
- 3 green onions, sliced
- 2 slices low-sodium bacon, chopped
- 2 Tbsp extra virgin olive oil
- 1 Tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- ¼ cup crumbled feta cheese
Instructions
- Cook pasta according to package directions; drain. Toss with tomatoes and onions.
- Cook bacon in a nonstick skillet over medium heat until crisp; drain. Stir bacon into pasta mixture.
- Whisk together oil, lemon juice, mustard and honey; toss with pasta salad. Season to taste with salt and pepper. Top with feta.
Side Dish Ingredients
- 2 tsp chopped fresh basil
- ½ tsp grated lemon rind
- 2 Tbsp butter, softened
- ½ (8-oz) French bread baguette, halved lengthwise
Side Dish Instructions
- Preheat oven to 350°F. Stir together first 3 ingredients; spread over cut sides of bread. Place on a baking sheet.
- Bake 5 to 7 minutes or until toasted. Cut into slices to serve.
