Zesty Pasta Salad with Bacon and Grape Tomatoes

Ingredients

  • 4 oz uncooked penne pasta
  • 1 cup grape tomatoes, halved
  • 3 green onions, sliced
  • 2 slices low-sodium bacon, chopped
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • ¼ cup crumbled feta cheese

Instructions

  1. Cook pasta according to package directions; drain. Toss with tomatoes and onions.
  2. Cook bacon in a nonstick skillet over medium heat until crisp; drain. Stir bacon into pasta mixture.
  3. Whisk together oil, lemon juice, mustard and honey; toss with pasta salad. Season to taste with salt and pepper. Top with feta.

Side Dish Ingredients

  • 2 tsp chopped fresh basil
  • ½ tsp grated lemon rind
  • 2 Tbsp butter, softened
  • ½ (8-oz) French bread baguette, halved lengthwise

Side Dish Instructions

  1. Preheat oven to 350°F. Stir together first 3 ingredients; spread over cut sides of bread. Place on a baking sheet.
  2. Bake 5 to 7 minutes or until toasted. Cut into slices to serve.
