Chipotle Turkey Meatballs

Ingredients

  • ¾ lb ground turkey
  • 1 clove garlic, minced
  • ½ tsp ground cumin
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 1 Tbsp olive oil
  • ½ onion, chopped
  • 1 (14.5-oz) can crushed tomatoes
  • 1 to 2 chipotle chile peppers in adobo sauce, finely chopped
  • ½ tsp paprika

Instructions

  1. Combine turkey, garlic, cumin, and ¼ tsp each salt and pepper; shape into 1-inch balls.
  2. Cook in hot oil in a deep nonstick skillet over medium heat 4 minutes or until browned and centers are no longer pink, stirring constantly. Remove and keep warm.
  3. Add onion to skillet; sauté 5 minutes or until tender. Add remaining ingredients; bring to a boil, and simmer 15 minutes or until slightly thickened.
  4. Add meatballs; cover and simmer 5 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1 cup instant white rice
  • 1 (12-oz) pkg green beans
  • 1 Tbsp butter

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Microwave green beans according to package directions. Stir in butter.
  3. Season rice and green beans with salt and pepper to taste.
