Chipotle Turkey Meatballs
Fluffy Rice and Steamed Green Beans
Ingredients
- ¾ lb ground turkey
- 1 clove garlic, minced
- ½ tsp ground cumin
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 Tbsp olive oil
- ½ onion, chopped
- 1 (14.5-oz) can crushed tomatoes
- 1 to 2 chipotle chile peppers in adobo sauce, finely chopped
- ½ tsp paprika
Instructions
- Combine turkey, garlic, cumin, and ¼ tsp each salt and pepper; shape into 1-inch balls.
- Cook in hot oil in a deep nonstick skillet over medium heat 4 minutes or until browned and centers are no longer pink, stirring constantly. Remove and keep warm.
- Add onion to skillet; sauté 5 minutes or until tender. Add remaining ingredients; bring to a boil, and simmer 15 minutes or until slightly thickened.
- Add meatballs; cover and simmer 5 minutes or until thoroughly heated.

- 1 cup instant white rice
- 1 (12-oz) pkg green beans
- 1 Tbsp butter
Side Dish Instructions
- Cook rice according to package directions.
- Microwave green beans according to package directions. Stir in butter.
- Season rice and green beans with salt and pepper to taste.
