Lemon-Pesto Penne with Tomatoes and Walnuts

Ingredients

  • 3 (8.5-oz) pouches microwavable penne pasta (such as Barilla)
  • ½ cup coarsely chopped walnuts
  • 1 lemon
  • 1 (7-oz) carton refrigerated pesto
  • 2 pints multicolored grape tomatoes
  • 1 (5-oz) pkg arugula
  • 1 (1-oz) pkg fresh basil, chopped
  • 1 cup freshly shredded Parmesan cheese

Instructions

  1. Cook pasta according to package directions.
  2. Toast nuts in a dry skillet over medium-high heat 3 to 4 minutes or until fragrant.
  3. Grate zest and squeeze juice from lemon. Combine pesto, zest, and juice. Toss together pasta, pesto mixture, tomatoes, arugula, basil, and nuts. Sprinkle with cheese.
