Creamy Cheddar Grits

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into chunks
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (8-oz) pkg chopped onion, bell pepper, and celery mix (or use 1 cup frozen seasoning blend)
  • 1 Tbsp jarred minced garlic
  • 2 Tbsp olive oil
  • 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano 
  • 2 tsp salt-free Cajun seasoning
  • 1 Tbsp chopped fresh thyme

Instructions

  1. Sprinkle chicken with salt and pepper. Sauté chicken, vegetable mix, and garlic in hot oil in a large, deep skillet over medium-high heat 6 minutes.
  2. Add tomatoes and seasoning; simmer 6 to 8 minutes or until chicken is done and sauce is thickened. Sprinkle with thyme.

  • 1½ cups quick-cooking grits
  • 1 cup shredded reduced-fat Cheddar cheese
  • 1½ Tbsp butter
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook grits according to package directions; stir in cheese, butter, salt, and pepper until blended.
