Creole Chicken
Creamy Cheddar GritsIngredients
- 2 lb boneless, skinless chicken breasts, cut into chunks
- ½ tsp salt
- ½ tsp pepper
- 1 (8-oz) pkg chopped onion, bell pepper, and celery mix (or use 1 cup frozen seasoning blend)
- 1 Tbsp jarred minced garlic
- 2 Tbsp olive oil
- 2 (14.5-oz) cans diced tomatoes with basil, garlic, and oregano
- 2 tsp salt-free Cajun seasoning
- 1 Tbsp chopped fresh thyme
Instructions
- Sprinkle chicken with salt and pepper. Sauté chicken, vegetable mix, and garlic in hot oil in a large, deep skillet over medium-high heat 6 minutes.
- Add tomatoes and seasoning; simmer 6 to 8 minutes or until chicken is done and sauce is thickened. Sprinkle with thyme.

- 1 cup shredded reduced-fat Cheddar cheese
- 1½ Tbsp butter
- ½ tsp salt
- ½ tsp pepper
