Strawberries with Fresh Mint

Ingredients

  • 1 avocado, pitted and mashed
  • 2 Tbsp reduced-fat olive oil mayonnaise
  • 1 tsp fresh lemon juice
  • 8 (1-oz) slices whole-grain sandwich bread, toasted
  • ½ lb thin deli-sliced oven-roasted low-sodium turkey (such as Boar's Head)
  • 4 slices center-cut bacon, cooked
  • 1 tomato, sliced
  • 1 cup spring mix

Instructions

  1. Stir together avocado, mayonnaise, and lemon juice; spread over one side of 4 bread slices.
  2. Layer with turkey, bacon, tomato, lettuce, and remaining bread slices. Cut sandwiches in half diagonally.

  • 3 cups quartered strawberries
  • ¼ cup chopped fresh mint
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp honey

Side Dish Instructions

  1. Gently toss together all ingredients in a large bowl. Chill until ready to serve.
