Turkey-Avocado BLTs
Strawberries with Fresh Mint
Ingredients
- 1 avocado, pitted and mashed
- 2 Tbsp reduced-fat olive oil mayonnaise
- 1 tsp fresh lemon juice
- 8 (1-oz) slices whole-grain sandwich bread, toasted
- ½ lb thin deli-sliced oven-roasted low-sodium turkey (such as Boar's Head)
- 4 slices center-cut bacon, cooked
- 1 tomato, sliced
- 1 cup spring mix
Instructions
- Stir together avocado, mayonnaise, and lemon juice; spread over one side of 4 bread slices.
- Layer with turkey, bacon, tomato, lettuce, and remaining bread slices. Cut sandwiches in half diagonally.

- 3 cups quartered strawberries
- ¼ cup chopped fresh mint
- 2 Tbsp fresh lemon juice
- 1 Tbsp honey
Side Dish Instructions
- Gently toss together all ingredients in a large bowl. Chill until ready to serve.
