Roast Beef and Creamy Radish Baguettes
Fresh Orange-Avocado SaladIngredients
- 5 radishes, thinly sliced
- ¼ cup reduced-fat sour cream
- ¼ tsp white wine vinegar
- ¼ tsp salt
- ½ tsp pepper
- 2 dashes of hot sauce
- 1 cup spring mix
- 1 (8-oz) multigrain French bread baguette, split horizontally
- ½ lb deli-sliced low-sodium roast beef
Instructions
- Toss together radishes, sour cream, vinegar, salt, pepper, and hot sauce in a bowl.
- Arrange spring mix on bottom half of baguette. Top with roast beef and radish salad. Cover with top half of baguette. Cut into 4 equal portions, and wrap tightly in plastic wrap or foil until ready to serve.
Side Dish Ingredients
- 1 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- ¼ tsp salt
- 3 navel oranges, peeled and sectioned
- 1 small avocado, pitted and diced
Side Dish Instructions
- Whisk together lemon juice, oil, and salt in a bowl. Add oranges, and toss well. Stir in avocados just before serving.
