Applesauce Cupcakes with Cream Cheese Frosting

Ingredients

  • 1 (18.25-oz) pkg spice cake mix
  • 1¼ cups unsweetened applesauce
  • ⅓ cup vegetable oil
  • 3 large eggs
  • 24 standard baking cups
  • 1 (8-oz) block ⅓-less-fat cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F. Beat cake mix, applesauce, oil, and eggs at medium speed with an electric mixer until blended.
  2. Place baking cups in 2 (12-cup) muffin pans. Spoon batter into cups.
  3. Bake 18 to 20 minutes or until a wooden pick inserted in centers comes out clean. Cool in pans 5 minutes. Remove from pans to wire racks, and cool completely.
  4. Beat cream cheese at medium-high speed with an electric mixer until fluffy. Gradually add sugar, beating at medium speed until blended.
  5. Spread frosting on cupcakes.
