Applesauce Cupcakes with Cream Cheese Frosting

Ingredients
- 1 (18.25-oz) pkg spice cake mix
- 1¼ cups unsweetened applesauce
- ⅓ cup vegetable oil
- 3 large eggs
- 24 standard baking cups
- 1 (8-oz) block ⅓-less-fat cream cheese, softened
- 2 cups powdered sugar
Instructions
- Preheat oven to 350°F. Beat cake mix, applesauce, oil, and eggs at medium speed with an electric mixer until blended.
- Place baking cups in 2 (12-cup) muffin pans. Spoon batter into cups.
- Bake 18 to 20 minutes or until a wooden pick inserted in centers comes out clean. Cool in pans 5 minutes. Remove from pans to wire racks, and cool completely.
- Beat cream cheese at medium-high speed with an electric mixer until fluffy. Gradually add sugar, beating at medium speed until blended.
- Spread frosting on cupcakes.
