Homestyle Black Bean Taco Mac
Arugula Salad with Honey-Lime DressingIngredients
- 8 oz uncooked elbow macaroni
- 1 Tbsp butter
- 1 clove garlic, minced
- 1 Tbsp flour
- 1 cup milk
- ½ Tbsp Southwest seasoning
- 1 (15-oz) can black beans, drained and rinsed
- 1 cup freshly shredded Cheddar cheese, divided
- 1 tomato, chopped
- ¼ cup sour cream
Instructions
- Cook pasta according to package directions.
- Melt butter in a large Dutch oven over medium-high heat. Add garlic; cook 30 seconds to 1 minute or until fragrant.
- Whisk in flour and cook 2 minutes. Add milk and Southwest seasoning; whisk constantly 5 minutes, until mixture thickens. Remove from heat.
- Add beans and ¾ cups cheese; stir until melted. Stir in pasta and tomato.
- Top with remaining ¼ cup cheese and sour cream to serve.
Side Dish Ingredients
- 2¼ cups arugula
- 1 clove garlic, minced
- 2 Tbsp fresh lime juice
- 1 Tbsp olive oil
- 1 Tbsp honey
Side Dish Instructions
- Place arugula in a serving bowl.
- Whisk together garlic, lime juice, olive oil and honey; drizzle over arugula, and toss to coat.
