Arugula Salad with Honey-Lime Dressing

Ingredients

  • 8 oz uncooked elbow macaroni
  • 1 Tbsp butter
  • 1 clove garlic, minced
  • 1 Tbsp flour
  • 1 cup milk
  • ½ Tbsp Southwest seasoning
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup freshly shredded Cheddar cheese, divided
  • 1 tomato, chopped
  • ¼ cup sour cream

Instructions

  1. Cook pasta according to package directions.
  2. Melt butter in a large Dutch oven over medium-high heat. Add garlic; cook 30 seconds to 1 minute or until fragrant.
  3. Whisk in flour and cook 2 minutes. Add milk and Southwest seasoning; whisk constantly 5 minutes, until mixture thickens. Remove from heat.
  4. Add beans and ¾ cups cheese; stir until melted. Stir in pasta and tomato.
  5. Top with remaining ¼ cup cheese and sour cream to serve.

Side Dish Ingredients

  • 2¼ cups arugula
  • 1 clove garlic, minced
  • 2 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • 1 Tbsp honey

Side Dish Instructions

  1. Place arugula in a serving bowl.
  2. Whisk together garlic, lime juice, olive oil and honey; drizzle over arugula, and toss to coat.
