Smoked Paprika Pork Chops

Ingredients
- 6 (8-oz) bone-in pork loin chops
- 3 Tbsp smoked paprika
- 2 Tbsp olive oil
Instructions
- Rub pork chops evenly with smoked paprika; season with salt and pepper.
- Heat oil in a large nonstick skillet over medium heat; cook pork chops 5 minutes per side or until done.
Side Dish Ingredients
- 3 ears corn on the cob, shucked and cleaned
- 1 Tbsp olive oil
- 1 tsp minced garlic
- 1 pint grape tomatoes, halved
- 2 cups frozen baby lima beans
- 1 cup chicken broth
- 2 Tbsp chopped fresh basil
Side Dish Instructions
- Cut kernels of corn from cobs.
- Heat oil in a large skillet over medium-high heat.
- Add garlic; cook 30 seconds. Add corn, tomatoes, salt, and pepper; sauté 2 minutes or until just tender. Add lima beans and broth.
- Cover and cook 5 minutes or until beans are tender; uncover and cook 3 minutes longer or until liquid has evaporated.
- Stir in basil just before serving.
