Smoked Paprika Pork Chops

Ingredients

  • 6 (8-oz) bone-in pork loin chops
  • 3 Tbsp smoked paprika
  • 2 Tbsp olive oil

Instructions

  1. Rub pork chops evenly with smoked paprika; season with salt and pepper.
  2. Heat oil in a large nonstick skillet over medium heat; cook pork chops 5 minutes per side or until done.

Side Dish Ingredients

  • 3 ears corn on the cob, shucked and cleaned
  • 1 Tbsp olive oil
  • 1 tsp minced garlic
  • 1 pint grape tomatoes, halved
  • 2 cups frozen baby lima beans
  • 1 cup chicken broth
  • 2 Tbsp chopped fresh basil

Side Dish Instructions

  1. Cut kernels of corn from cobs.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add garlic; cook 30 seconds. Add corn, tomatoes, salt, and pepper; sauté 2 minutes or until just tender. Add lima beans and broth.
  4. Cover and cook 5 minutes or until beans are tender; uncover and cook 3 minutes longer or until liquid has evaporated.
  5. Stir in basil just before serving.
