Philly Cheesesteak Chicken and Rice Skillet

Ingredients

  • 2 (6.9-oz) boxes chicken-flavor rice mixes
  • 3 Tbsp butter
  • 1½ lb chicken cutlets, cut into bite-sized pieces
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1½ tsp garlic salt
  • 1 tsp pepper
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Prepare rice according to package directions.
  2. Melt butter in a large skillet over medium heat.
  3. Add chicken, bell pepper, onion, garlic salt, and pepper; cook 5 to 6 minutes or until chicken is done and vegetables are tender.
  4. Add rice to skillet; stir. Sprinkle with cheese, cover, and cook 2 minutes or until cheese is melted.
