Bacon and Turkey Sandwiches with Chipotle Mayonnaise
Onion Rings with Lime Dipping Sauce
Ingredients
- 1 (2.52-oz) pkg fully-cooked bacon
- 1½ cups mayonnaise
- 2 canned chipotle peppers in adobo sauce, finely chopped
- 2 tsp adobo sauce, from can
- 1 Tbsp fresh lime juice
- 12 slices sourdough bread, toasted
- 3 cups fresh arugula
- 2 tomatoes, thinly sliced
- 2 avocados, thinly sliced
- 1 lb thinly sliced deli turkey
Instructions
- Heat bacon according to package directions, if desired.
- Stir together mayonaise, chipotle peppers, adobo sauce, and lime juice in a bowl.
- Spread one-third of mixture over 1 side of each bread slice.
- Top half with arugula, tomato, avocado, bacon, and turkey.
- Cover with remaining bread slices, spread side down. Cut in half to serve.

- 1 (14-oz) bag frozen onion rings
Side Dish Instructions
- Bake onion rings according to pkg directions.
- Serve with remaining mayonnaise mixture for dipping.
