Bacon and Turkey Sandwiches with Chipotle Mayonnaise

Ingredients

  • 1 (2.52-oz) pkg fully-cooked bacon
  • 1½ cups mayonnaise
  • 2 canned chipotle peppers in adobo sauce, finely chopped
  • 2 tsp adobo sauce, from can
  • 1 Tbsp fresh lime juice
  • 12 slices sourdough bread, toasted
  • 3 cups fresh arugula
  • 2 tomatoes, thinly sliced
  • 2 avocados, thinly sliced
  • 1 lb thinly sliced deli turkey

Instructions

  1. Heat bacon according to package directions, if desired.
  2. Stir together mayonaise, chipotle peppers, adobo sauce, and lime juice in a bowl.
  3. Spread one-third of mixture over 1 side of each bread slice.
  4. Top half with arugula, tomato, avocado, bacon, and turkey.
  5. Cover with remaining bread slices, spread side down. Cut in half to serve.

  • 1 (14-oz) bag frozen onion rings

Side Dish Instructions

  1. Bake onion rings according to pkg directions.
  2. Serve with remaining mayonnaise mixture for dipping.
