Easy Caprese Chicken

Ingredients

  • 1½ lb chicken cutlets
  • 1 tsp garlic salt
  • ½ tsp pepper
  • 1 Tbsp olive oil
  • 1 (8-oz) pkg sliced mozzarella cheese
  • 1 lb Roma tomatoes, thinly sliced
  • 1 (1-oz) pkg fresh basil, chopped
  • 3 Tbsp balsamic vinegar

Instructions

  1. Sprinkle chicken with garlic salt and pepper.
  2. Heat oil in a large nonstick skillet over medium heat. Add chicken, and cook 3 to 4 minutes per side or until browned.
  3. Place cutlets on a rimmed baking sheet; top each cutlet with 1 slice cheese and 3 slices tomato.
  4. Preheat broiler.
  5. Broil chicken 2 to 3 minutes or until tomatoes are blistered and cheese is browned. Sprinkle with basil and drizzle with vinegar.

Side Dish Ingredients

  • 2 (8.8-oz) pouches microwavable jasmine rice
  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Heat rice according to package directions.
  2. Preheat oven to 400°F.
  3. Toss together broccoli and oil on a rimmed baking sheet.
  4. Bake 10 minutes or until browned and tender; season to taste.
