Easy Caprese Chicken
Steamed Rice and Roasted Broccoli
Ingredients
- 1½ lb chicken cutlets
- 1 tsp garlic salt
- ½ tsp pepper
- 1 Tbsp olive oil
- 1 (8-oz) pkg sliced mozzarella cheese
- 1 lb Roma tomatoes, thinly sliced
- 1 (1-oz) pkg fresh basil, chopped
- 3 Tbsp balsamic vinegar
Instructions
- Sprinkle chicken with garlic salt and pepper.
- Heat oil in a large nonstick skillet over medium heat. Add chicken, and cook 3 to 4 minutes per side or until browned.
- Place cutlets on a rimmed baking sheet; top each cutlet with 1 slice cheese and 3 slices tomato.
- Preheat broiler.
- Broil chicken 2 to 3 minutes or until tomatoes are blistered and cheese is browned. Sprinkle with basil and drizzle with vinegar.
Side Dish Ingredients
- 2 (8.8-oz) pouches microwavable jasmine rice
- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
Side Dish Instructions
- Heat rice according to package directions.
- Preheat oven to 400°F.
- Toss together broccoli and oil on a rimmed baking sheet.
- Bake 10 minutes or until browned and tender; season to taste.
