Easy Red Pepper Baked Fish
Fingerling Potatoes and Lemon Steamed Green Beans
Ingredients
- 1½ lb fresh or frozen (thawed) cod fillets, rinsed and patted dry (or use any lean white fish fillets)
- 1½ tsp Old Bay seasoning
- 1½ cups thinly sliced red bell peppers
- 3 Tbsp extra virgin olive oil
Instructions
- Preheat oven to 350°F.
- Place fish in a baking pan coated with cooking spray; sprinkle with Old Bay seasoning, and top with bell peppers.
- Lightly coat with cooking spray, and cover with foil.
- Bake 20 minutes or until fish flakes with a fork.
- Drizzle with oil.
Side Dish Ingredients
- 2 lb fingerling potatoes
- 1 tsp salt
- 1½ lb green beans, trimmed
- 2 Tbsp extra virgin olive oil
- 2 Tbsp fresh lemon juice
- ¼ tsp pepper
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a saucepan; reduce heat, and simmer 15 minutes or until potatoes are tender.
- Drain and sprinkle with ½ tsp salt.
- Arrange green beans in a steamer basket over boiling water. Cover and steam 5 minutes or until crisp-tender.
- Drain and transfer to a serving bowl. Drizzle with oil and lemon juice; sprinkle with ½ tsp salt and pepper. Toss.
