Easy Red Pepper Baked Fish

Ingredients

  • 1½ lb fresh or frozen (thawed) cod fillets, rinsed and patted dry (or use any lean white fish fillets)
  • 1½ tsp Old Bay seasoning
  • 1½ cups thinly sliced red bell peppers
  • 3 Tbsp extra virgin olive oil

Instructions

  1. Preheat oven to 350°F.
  2. Place fish in a baking pan coated with cooking spray; sprinkle with Old Bay seasoning, and top with bell peppers.
  3. Lightly coat with cooking spray, and cover with foil.
  4. Bake 20 minutes or until fish flakes with a fork.
  5. Drizzle with oil.

  • 2 lb fingerling potatoes
  • 1 tsp salt
  • 1½ lb green beans, trimmed
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp fresh lemon juice
  • ¼ tsp pepper

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a saucepan; reduce heat, and simmer 15 minutes or until potatoes are tender.
  2. Drain and sprinkle with ½ tsp salt.
  3. Arrange green beans in a steamer basket over boiling water. Cover and steam 5 minutes or until crisp-tender.
  4. Drain and transfer to a serving bowl. Drizzle with oil and lemon juice; sprinkle with ½ tsp salt and pepper. Toss.
