Zucchini and Tomato Frittata
Mixed Berry Parfaits
Ingredients
- 3 Tbsp olive oil, divided
- 1 zucchini, thinly sliced
- 1 pint organic grape tomatoes, halved
- 8 large eggs, lightly beaten
- 2 green onions, chopped
- 2 tsp Italian seasoning
- 3 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Instructions
- Preheat oven to 400°F. Grease a 9-inch baking dish with 1 Tbsp oil.
- Heat 2 Tbsp oil in a large nonstick skillet over medium heat. Add zucchini and tomatoes; cook 4 minutes or until tender. Spread zucchini in baking dish.
- Whisk together eggs, green onions, seasoning, garlic, salt, and pepper in a large bowl. Pour mixture over zucchini in dish.
- Bake 20 to 25 minutes or until center is set. Cut into squares to serve.
Side Dish Ingredients
- 4 cups favorite mixed berries (such as organic strawberries, blueberries, and raspberries)
- 2 Tbsp chopped fresh mint
- 1 Tbsp fresh lemon juice
- 2 cups plain Greek yogurt
- 2 Tbsp honey
- 1 cup chopped walnuts (or use almonds)
Side Dish Instructions
- Combine berries, mint, and lemon juice in a medium bowl; stir together yogurt and honey in a separate small bowl.
- Layer half of berries into 6 serving glasses or bowls; top with half of yogurt mixture and half of nuts.
- Repeat with remaining berries, yogurt, and nuts.
