Zucchini and Tomato Frittata

Ingredients

  • 3 Tbsp olive oil, divided
  • 1 zucchini, thinly sliced
  • 1 pint organic grape tomatoes, halved
  • 8 large eggs, lightly beaten
  • 2 green onions, chopped
  • 2 tsp Italian seasoning
  • 3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F. Grease a 9-inch baking dish with 1 Tbsp oil.
  2. Heat 2 Tbsp oil in a large nonstick skillet over medium heat. Add zucchini and tomatoes; cook 4 minutes or until tender. Spread zucchini in baking dish.
  3. Whisk together eggs, green onions, seasoning, garlic, salt, and pepper in a large bowl. Pour mixture over zucchini in dish.
  4. Bake 20 to 25 minutes or until center is set. Cut into squares to serve.

Side Dish Ingredients

  • 4 cups favorite mixed berries (such as organic strawberries, blueberries, and raspberries)
  • 2 Tbsp chopped fresh mint
  • 1 Tbsp fresh lemon juice
  • 2 cups plain Greek yogurt
  • 2 Tbsp honey
  • 1 cup chopped walnuts (or use almonds)

Side Dish Instructions

  1. Combine berries, mint, and lemon juice in a medium bowl; stir together yogurt and honey in a separate small bowl.
  2. Layer half of berries into 6 serving glasses or bowls; top with half of yogurt mixture and half of nuts.
  3. Repeat with remaining berries, yogurt, and nuts.
